Elevated Cauliflower Fritters

A great way to turn your boring vegetables into exciting stars of the night is to transform them

Have you ever walked by That bag of cauliflower grated in the produce section of your local grocery store? Stop walking by it do yourself a favor and put it in your basket. Don’t be afraid to experiment with new ingredients. The cauliflower sold this way is often used for cauliflower pizza dough. You can use it many different ways. Today I used it for a nice fritter or crab cake style dish.

Mix it up until you can form moldable balls or cakes.

Grated cauliflower, a couple eggs, diced cheddar cheese, bread crumbs, salt and pepper are all you need. Add ingredients based on how feel they need to not be to wet in order to maintain hold. You can also freeze them slightly prior to cooking to help keep them together.

Serve them as an appetizer with a nice aioli or to accompany your entree. Fry until golden brown. They are very tasty so make sure you make extra.

I served mine with some chicken, pickled apples, grilled cabbage, and aloha sauce.

There is something that draws a cook to a gorgeous well-crafted pan. Could it be that we are all attracted to shiny objects. I’m not sure exactly what it is but I do know it reminds me of the walls in a professional kitchen. So maybe we feel transported to a  restaurant we dream of owning cooking the daily specials. Whatever the case this pan starts out well. The pan feels well crafted and sturdy with a solid amount of weight.

So far I have used this pan several times and it has quickly emerged as the go-to pan in my kitchen and is simply as advertised. I love it when you have a tool in the kitchen that is not one dimensional. This pan has met my expectations head on and come out shining. Cleaning up this pan so far has been   very easy no hard scrubbing required. The way this pan balance the heat is beautifully done.

Exquisite Roasted Mushrooms

Well prepared mushrooms will sing to any palate

Do yourself a favor and go beyond the button mushroom. There is nothing wrong with a button mushroom. There is however more depth and flavor in other varieties of mushrooms that are probably available at your local supermarket. The mistake that people often make that kills the mushroom’s chance at being delicious is they wash them. Washing mushrooms waterlog them and mess with the structure of a tremendous ingredient.

Be sure to get your mis en place ready.

For this dish remember to season the mushrooms after cooking. A little olive oil is all you need to start. Cut your mushrooms into the desired size and add leeks (wash leeks well) parsley, and garlic. Send to the oven at 400 degrees.

The transformation of the mushrooms prepared well will memorize you.

It takes approximately 20 to 25 minutes and be sure to stir them halfway through. Side note know your oven since oven times and temps vary from one oven to the next.When the mushrooms have reached their desired doneness pull them out of the oven and season. I added salt, garlic butter and served. The mushrooms were fan freaking tastic. I served them with a juicy steak.

A mushroom prepared well definitely compliments a variety of different main dishes.
