
It started as a hunch throw some hickory wood on the grill and get it smoking. When the time is right add some seasoned pork butt. The meat and the smoke combine to evolve the flavors of the pork over several hours near low heat. I seasoned the pork with banana sauce, salt, and pepper.


Then I had the brilliant idea to utilize the smoked meat in adobo! The smokey flavors really complemented the adobo. I also added smoked salt pork and potatoes to the recipe.
